Abstract: 

For many years, assessment of OLIVE OIL quality and its authenticity confirmation has been of great importance to guarantee OLIVE OIL safety in compliance with legislations. These include the investigation of OLIVE OIL purity and quality by analyzing several parameters such as fatty acid composition, sterols, phenolic compounds, triacylglycerol and etc, through performing conventional and advanced hyphenated techniques.

Abstract: 

In this study, the effect of OLIVE variety (Kroneiki, Iranian native oleaginous and mission) and enzyme concentration on yield, acidity, peroxide value, iodine value, turbidity, integral color index and total polyphenols of extracted OIL was investigated. The statistical analysis was carried out using factorial experiment 3´3 in Completely Randomized Design (CRD) with three replicates. Our results showed that the effect of variety on all of examined factors was significant (P<0.01). The effect of enzyme concentration on extraction yield, color, turbidity and total polyphenol showed significant difference (P<0.01). Although, there was not significant effect (P<0.05) on acidity, peroxide value and iodine value. Color and phenolic content in extracted OIL produced by aqueous enzymatic process as compared with those in control showed significant difference (P<0.01) between 13 to 62.2 and 13.9 to 72.6 percent, respectively. Turbidity showed significant (P<0.01) reduction between 29.6 to 67.4 percent. On the basis of our result, the yield of OIL extraction by processing aid was significantly (P<0.01) higher (1.3-2.4 percent) than that of control. It was concluded that application of enzymatic pretreatment increases quantity and quality of extracted OIL and it is applicable as a processing aid in OIL extraction unit operation.

Abstract: 

Background: Obesity could lead to different diseases. Regarding the lack of statistical information about obesity, Body Mass Index (BMI), diabetes and high blood pressure in rural women over 30 years old in Saeidabad, located in East Azarbayjan province of Iran, as well as the relationship between these two categories, the present study was designed to determine the prevalence of obesity and the amount of BMI, the association of these index with diabetes and high blood pressure.Methods: The study population was rural women over 30 years old in Saeidabad. The sample size was selected 106 women using SPSS software.Results: There was a significant relationship between prevalence of obesity and BMI in women over 30 years of age in Saeidabad, with a high incidence of diabetes, and hypertension.Conclusion: Obesity is an important risk factor for diabetes and hypertension in women aged more than 30 years and they should be informed about the risky consequences.

Abstract: 

BACKGROUND: LIPASE (TRIACYLGLYCEROL HYDROLASE, EC 3.1.1.3) IS ONE OF THE MOST EXTENSIVELY USED ENZYMES THAT CATALYZED THE HYDROLYSIS OF TRIACYL-GLYCEROL TO GLYCEROL AND FATTY ACIDS IN OIL–WATER INTERFACE SYSTEMS [1, 2]. THEREFORE, IT WAS NECESSARY TO IMPROVE THE IMMOBILIZATION STABILITY [3]. IN THE PRESENT STUDIED FOCUSED TOWARDS THE IMMOBILIZATION AND FURTHER TO BE EMPLOYED FOR OLIVE OIL HYDROLYSIS.METHODS: THE ACTIVATION OF HYDROXYL GROUPS OF CLOISITE WAS ACHIEVED BY REACTION WITH TSCL. AFTERWARD; TOSYLATED CLOISITE WAS MODIFIED WITH 4-HYDROXY BENZALDEHYDE. FOR IMMOBILIZATION OF LIPASE, ACTIVATED CLOISITE CONTINUOUSLY STIRRING THE REACTION MEDIUM AND WAS EMPLOYED FOR OLIVE OIL HYDROLYSIS. THE HYDROLYSIS ACTIVITY FOR OLIVE OIL WAS MEASURED BY THE TITRIMETRIC METHOD WITH FEW MODIFICATIONS.RESULTS: IN THIS STUDY THE OPTIMUM PH FOR LIPASE ACTIVITY VARIES, WITH THE ENZYME SPECIES. IN OUR STUDY PH OPTIMUM ACTIVITY OF IMMOBILIZED LIPASES WAS 73%. BECAUSE ENZYMATIC ACTIVITY IS OBVIOUSLY TEMPERATURE DEPENDENT, THE CATALYTIC ACTIVITY OF IMMOBILIZED LIPASE WAS TESTED AT DIFFERENT TEMPERATURES (40-80OC), A MAXIMUM OF ACTIVITY WAS RECORDED AT 55OC.CONCLUSION: IN THE PRESENT STUDY, TOSYLATED CLOISITE WAS PREPARED BY MODIFICATION WITH 4-HYDROXY BENZALDEHYDE.
